A Bunyan-size man in bib overalls, "Big Moe," as he's called, inspects the blackened piece of meat that has been smoking in a wood-fired cocoon for 12 hours. While Big Moe dotes on the pork, others on his team prepare the final ingredient – the barbecue sauce.
